Kiku

Y'all remember this sweetheart? Kiku came with us to the States from Puerto Rico two years ago. She was my sweet baby and I love, love, love her.

She snuck into quite a few of my outfit pictures and was the best cuddler ever.

And I know everyone thinks their dog is the best ever, but mine seriously was. She was so sweet and obedient and cuddly. Have I mentioned that she was cuddly?

We got a call on the 23rd with some bad news from Costa Rica. Our house was broken into, our school money was stolen. Worst of all, though, Kiku was hit by a car.

Our neighbors were taking (excellent) care of her, and they tried to get her to the vet, but she died on the way.

So, this is probably the saddest post ever, and I worried about sharing it, but she was kind of around these parts a lot. I can't say I'm looking forward to going back to CR and not finding her, but I'm trying to remind myself she was one happy, happy baby while she was with us.

Thankful, thankful, thankful

I really meant to do an outfit post this week. In fact, I meant to do several, but between work and NaNoWriMo, things have been crazy, mostly in a good way.
But since this is my first non-Thanksgiving-y Thanksgiving (I'm at work right now, if that gives you any indication of how non-Thanksgiving-y I am feeling), I thought I'd say a little something about how thankful I am for a million things. Well, at least five. I won't make y'all read a million things.

First off, I'm grateful for my husband who is amazing and wonderful and hot. I am seriously in love with that man. So, yay for three years together, yay that our second anniversary is coming up, and yay that we're stuck together forevaaaaaaa!

I am thankful for the cuteness of my kittens and my sweet Kiku. Their cuddles and purrs make me unbelievably happy.

I am thankful for the times I've been able to share with family this year, particularly the time my parents took us all on a cruise. Sun, food, family, the Caribbean.... It just doesn't get any better. Also, I'm thankful I'll be seeing them again in less than three weeks!

I am thankful for old friends, particularly those that are in Costa Rica, and who are inviting us to share Thanksgiving with them. Also, the friends whose emails, calls, skype sessions, and facebook messages have gotten me through. Love, love, love y'all.

Finally, I am thankful that I am feeling so much better and that I have amazing readers who have been beyond supportive through what's been a really trying time for me. Included in that, I'm thankful for the wonder of modern medicine and for my faith, which have allowed me to see - almost for the first time - the incredible beauty of the place where I now live.

Happy Thanksgiving to everyone in the States and all my fellow expats!

Welcome to Americana

B and I had our first date day in six weeks this past weekend. Six. Weeks. Yeah.... Let's not let that happen again, mmkay? I mean, it's not even like we have kids to keep us from having couple time. There is just no excuse for that kind of foolishness.
Except for, you know, work....

We went to Alajuela to hit up some Americanas. We stumbled into one that's probably my new favorite - the prices and the selections were AMAZING. B was sold because, Michigan boy that he is, he stumbled across a Pistons' jersey.
We don't talk much about the Pistons because I spent nearly nine years in the Chicago area and that's a sore spot for him. (We can agree on the Celtics though, and that's important.)

He also found this ridiculous Speed Racer jacket. I mean, really....

I was lucky enough to find this pink polyester jumpsuit which I would have gotten if it hadn't (a) been meant for someone six inches taller and (b) had a huge stain on the back of one leg. Even though it was a whopping $.80, I couldn't take the chance when it needed so much work.

We also went to the mall for crepes (mine was Nutella filled because I have an addiction that needs to be fed, okay?) and a movie.

B's crepe was fruit and whipped cream filled and came with ice cream. He thinks he made the better choice, but I beg to differ....

Rant

So once upon a time, I joined a gym, it's Lucille Roberts, in case y'all are in PA, NJ, or NY and are familiar with it. Anyway, I've been trying and trying to cancel my membership because of changed residence, but I can't get a utility bill or a bank statement with my address on it.
See, I live in the rain forest, and Costa Rican addresses are a little weird (our current one is 400 meters north of the Catholic church in Vara Blanca). No one - I repeat, NO ONE delivers mail up here. It just doesn't happen. You go to the supermarket to check your light bill and you pay it there because you better believe you will NOT be getting a utility bill at your house. In the city, you will, but up here on the mountain? No way.

So I try to explain this to both "customer service" agents over the phone (while using a VOIP service, because, you know, no phone) and they are just baffled that there could possibly be a place without mail. They're sure I'm lying. Except I'm not, and seriously, do they think the entire world is like NYC? Because it's not.

Right, so now my only option is to pay a $50 cancellation fee which just annoys the crap out of me because if I'd moved three states away instead of six COUNTRIES away, I wouldn't have to pay that crap fine. And I'm not quite ready to give them that money especially because it's money we don't really have anymore.

I told them I'd be sure to let everyone I know know about this (hello, everyone I know). And now I'm asking for advice I guess, because usually I'm really great about dealing with customer service but this woman - whose response to my disappointment with their service was "Well, I have nothing to do with your disappointment. You're the one that moved." - made me SO ANGRY that I don't know how to handle it.

I tried to offer alternate documentation - a CR drivers license, scanned shots of my passport, a letter from my employer - but they weren't taking it. Am I being unreasonable or should I stick to my guns and fight this?

Totally off topic

Yes, I know that usually all I do over here is post what I wear, but y'all, last night I made granola from scratch (people apparently do this) and it was so good that I felt compelled to share it.

I got the recipe from my sister in law who got it from a cookbook (though I don't know which one) but I am incapable of following recipes, so I put my own little twist on it.

So here's what you need for this delicious granola:
  1. An oven
  2. A couple cookie sheets (or an assortment of oddly sized baking dishes as you'll soon see)
  3. An hour of your life that you can devote to stirring and timing
  4. All the ingredients below

Ingredients:
  • 6 cups old-fashioned oats
  • 2 cups flour
  • 2 cups packed brown sugar (I only had one, so I used one cup of brown and one of white)
  • 2 cups flaked coconut
  • 1-1/2 cups of nuts (I used a combo of chopped pecans and slivered almonds)
  • 1 cup wheat germ
  • 1 cup All Bran cereal
  • cinnamon (I think I used 1 T)
  • 3/4 cup veg oil
  • 3/4 cup water
  • 2 T vanilla extract
  • 1 t salt
  • 1 cup raisins
  • assorted dried fruit (I used a combo of chopped dried apricots, dried blueberries, and dried cherries and didn't measure this at all - about a cup, I think)

And here's how you put it all together:

Preheat your oven to 275 F.
Find the biggest bowl you own and mix the oats, flour, sugar, coconut, nuts, wheat germ, All Bran, and cinnamon. Make sure to break up all those clumps of sugar. It'll then look like this:

In another bowl, mix the oil, water, vanilla, and salt. Ooh and ah over the layers of liquid. No pics of this, but believe, layers of oil and water never get old. Add the wet ingredients to the dry and stir for approximately five thousand years until all the dry ingredients are wet. It won't be soaking wet, of course, just coated with a little liquid.
Spray your pans with cooking spray.

If you were a real baker (i.e. not me) you'd probably have two cookie sheets. I didn't, so I made do - and then figured out that I needed one more pan. Whoops.

Spoon your granola into a thinnish layer and put it in the oven. Be prepared to stir every ten minutes for the next hour.

While the granola was toasting away, I chopped up some dried apricots, mixed those with some dried blueberries, dried cherries, and raisins. I put the fruit in the bowl where I started mixing the dry ingredients only to realize it was too small, then I made a weird face and B. took a picture.

After an hour during which you grow to hate the oven timer for marking out ten minute intervals, pull the granola out of the oven and let it cool. Once it's cool, combine it with the fruit.

Serve yourself a bowl and give yourself a pat on the back for creating such deliciousness.

Bonus points if you don't drop your first bowl on the floor after two bites.
